Why Do We Love This?
VINEYARDS
Cabernet Sauvignon grapes can tolerate heat better than many other red varietals, thus California's unique climate offers the ideal conditions for growing high-quality cabernet sauvignon. The combination of warm days and cool nights creates an environment during the growing season in which the grapes enjoy plenty of hang time. The resulting fruit character is rich, robust and immediately enjoyable for its taste in the glass or as a complement to good food.
HARVEST
A dry winter and moderate growing season lead to balanced vine growth and open canopies, which were ideal for maturing the fruit. An early budbreak was followed in turn by early veraison and harvest. Temperatures remained moderate throughout the growing cycle, and the few heat spikes that did occur seemed well-timed to prevent over sizing of the fruit. Winemakers agree that the 2014 harvest was quite good, featuring vibrant flavours and aromas.
WINEMAKING
The hand chosen yeast and warm fermentation process provided great colour, structure, and fruit characters to this wine. The wine was stored in a stainless steel tank to preserve all aromas and flavours. Nice, ripe fruit devoid of greens and just the right amount of care and handling resulted in a delicious wine!
