Why Do We Love This?
This wine is a rare offering out of Margaret River as there are very few Pinot Gris vines planted in Western Australia. The vines were carefully managed throughout the growing season to ensure they were well balanced in terms of crop load and fruit shading, to ensure full ripeness was achieved whilst still retaining acidity and freshness, something critical to Pinot Gris (which is ripened on the vine longer than other white varieties). This wine is made from two very distinct vineyard sites that blend beautifully– one in the more northern part of Margaret River near Carbunup, and the other in the very much cooler southern area of Witchcliffe. All the fruit was picked during the day to ensure it was warm as the grapes were gently pressed to extract juice of the highest quality. This ensured the juice also remained warm and was oxidatively handled throughout this process to ensure no colour and phenolics in the end wine, in order to achieve our desired wine style. The juice was then left to settle overnight and “rough” racked the following day into fermentation. This inclusion of light solids during fermentation contributed texture and aromatic and flavour complexities into the end wine.
