The palate offers tremendous acidity, balance, and very enveloping sweetness combined with pleasing persistence.

Why Do We Love This?

The grapes come from different producers in the Itata Valley, and the majority of theplants are very old. The soils are predominately granitic with a clay-loam texture, andthe climate is humid Mediterranean. The vineyards are not drip irrigated in order tointerfere with the production of the grapes as little as possible. The grapes were handpicked to ensure they reached the winery in the best condition. Most weredestemmed before crushing, although 30% were whole-cluster crushed. Theresulting must was chilled and decanted prior to inoculation with selected yeasts forfermentation, which lasted 20 days at 14º–16ºC to ensure maximum aromas andvarietal character.
